Costa Vida began in 2012 when founders Maria and Carlos Sandoval brought the vibrant coastal flavors of their heritage to the heart of American Fork, Utah. What started as a small taco stand at the local farmers' market quickly grew into something far bigger than they ever imagined.

2012

The Beginning

Maria and Carlos Sandoval launch Costa Vida as a weekend taco stand at the American Fork Farmers' Market, earning rave reviews from the very first day.

2014

First Brick & Mortar

We opened our first physical location on Pacific Drive, featuring a full kitchen and a 40-seat dining room that quickly became a neighborhood favorite.

2016

Utah's Best Recognition

Costa Vida was named "Best Mexican-Inspired Restaurant in Utah County" by Utah Food & Travel Magazine, putting us on the regional food map.

2018

Catering & Delivery Launch

We expanded our services to include full-service catering for events and launched our own delivery program, bringing Costa Vida flavors directly to your door.

2021

Renovation & Expansion

A major renovation doubled our dining capacity and introduced an open kitchen concept, allowing guests to watch the magic unfold in real time.
